Sea Trout, New Potato and Asparagus Traybake

This is a quick and easy recipe if you don’t have much time or just not in a mood to cook. I personally love traybakes as then I don’t have to spend an hour or so prepping and stirring. The main idea with traybakes is you check what you have in the fridge/freezer, toss it on the tray, put it in the oven and you can go back and do whatever you were doing before!

High in folate

Another great thing about this recipe is that it’s high in folate. One serving contains 217-267 mcg or 66-100% RDV folate (B9). Read more about folate and folic acid here

  • 250g baked potatoes – 50-100mcg
  • 100g asparagus – 148.8mcg
  • 100g trout – 19mcg

Sea trout, new potato and asparagus traybake

A simple and easy recipe for when you don't have much time to cook but want a healthy meal.

Equipment

  • Baking tray
  • A pan
  • Colander
  • A kitchen knife

Ingredients
  

  • 1 kg baby new potatoes (any other potatoes would work fine as well)
  • 400 g asparagus
  • 2 tbsp olive oil
  • 4 fillet sea trout or salmon

Instructions
 

  • Heat the oven to 200C with a fan / 180C without the fan / gas 6.
  • Cook the potatoes in a pan of salted boiling water for 3 minutes.
  • Add the asparagus and cook for a further 2 minutes.
  • Drain really well then run the asparagus under cold water and put aside.
  • Toss the potatoes with the olive oil and season generously (e.g. Italian herbs, rosmarin, salt, peppers).
  • Spread them over a large, non-stick baking tray or dish and roast for 15-20 minutes or until they’re starting to brown and almost tender.
  • Nestle in the trout and asparagus, and season again.
  • Roast for another 10-12 minutes or until the trout is just cooked.
